Honey Glazed Chicken Breast on Egg Fried Rice

It is always a good idea to marinade chicken breast overnight in the fridge as it works as a tenderizer and flavour enhancer. Honey and mustard are a classic combination for this purpose.


Ingredients serve 4

4 chicken breasts (700g)
50 g melted butter
90 g honey
60 g barbecue sauce
2 tsp wholegrain mustard (12g)

Method

Place melted butter, honey, barbecue sauce and mustard in a bowl and combine. Add the chicken breast and make sure they are covered in marinate sauce. Cover the bowl and place in the fridge overnight. Heat a frying pan over medium heat with some butter or oil and fry the marinated chicken breasts approx. 4 minutes on each side. Meanwhile make the egg fried rice.

Egg Fried Rice

Ingredients serve 4

4 eggs
¼ cup vegetable oil (60g)
3 cups cooked long grain rice
50 g fresh or frozen peas
2 finely chopped spring onions (50g)
¼ cup finely chopped red capsicum (70g)
¼ tsp ground ginger

Method

Beat the eggs in a bowl with a pinch of sea salt. Heat a wok over high heat. Add the oil and lightly scramble the egg. Add the rice, peas, spring onions, capsicum and ginger before the eggs are set. Stir constant for approx 3 minutes until the mixture is hot. Place on a plate and slice the chicken and position on top.

Note: You will need to cook 200 g uncooked rice to make 3 cups cooked rice. The chicken can be cooked on the barbecue. For a stronger caramelized seasoning use a dark honey with strong flavour such as lavender or rosemary.
