Crepe with Fruit of the Forest Compote

Fruit of the forest is referring to wild growing fruit. In modern terms it is a blend of strawberries, raspberries, blackberries and blueberries. This is a great dessert using a crepe and a mixture of fruit. An addition of whipped cream, yoghurt or ice cream delivers additional wonderful flavours and texture.

Ingredients

Crepes (recipe)
200 g water
200 g red wine or port
450 g caster sugar
3½ tbls cornflour or arrowroot (35g)
3 tsp mixed spice (5g)
500 g fruit of the forest
Toasted almonds
Icing sugar

Method

Make crepes according to the recipe. Place 100 ml water, red wine, sugar and mixed spice in a saucepan and bring to the boil. Blend cornflour and 100 ml water in a pot and add while whisking. Cook for approx 3 minutes boil and add the fruit while stirring with a spoon. Place a crepe on a serving plate and spoon some fruit compote over it. Fold the crepes, drizzle toasted almonds and dust with some icing sugar.

Note: The mixture of fruit can be change according to liking and local fruit such red currants, black currants and cherries.
