Glazed Beef Meatloaf

Meatloaf is a dish made with minced meat formed into a loaf shape and baked or smoked. The meat can be mixed with a binder to make it more workable, salt, herbs, spices and vegetables may also be added while some recipes call for strips of bacon.

Ingredients (serves 4)

1 onion finely chopped (170g)
1 carrot, grated (130g)
¼ cup tomato sauce
½ cup finely chopped parsley
1 egg (50g)
1 tsp salt
½ tsp black ground pepper
1 cup rolled oats (100g)
500g lean beef mince
⅓ cup barbecue sauce

Method

Preheat oven to 180ÂșC. Lightly grease a 20cm x 9.5cm (base) loaf pan.
Place onion, carrot, tomato sauce, parsley, egg, salt, pepper in a large bowl and combine. Add the beef mince and mix until evenly blended. Place mixture into a prepared loaf pan and smooth top of loaf.
Cook meatloaf in the oven for approx 30 minutes or until cooked through. Pour or brush Barbecue sauce over the meatloaf and cook for another 10 minutes. Remove meat loaf from pan and slice. Serve with mashed potatoes, steamed vegetables and crispy fried onions.

Note: Try pan frying a slice of leftover meatloaf the next day.
