Chocolate Waffles

Modern waffles are often made from a batter leavened with baking powder and are generally served as a sweet breakfast food with butter and maple syrup or topped with other fruit syrups, honey or powdered sugar. They can also be served up as a dessert with ice cream, cream and fresh fruit.

Ingredients make 18

1 cup self raising flour (150g)
2 tbls cocoa powder
70 g chocolate chips
1 egg separated
½ cup milk (125g)
½ cup water (125g)
45 g melted butter
1 tbls caster sugar (10g)

Method

Preheat waffle maker or iron. Place flour, cocoa powder, chocolate chips, egg yolk, milk, water and butter. Mix until combined. Whisk the egg white with sugar in a bowl and fold into the waffle batter. Pour batter into each waffle plate. Close the lid down and cook for approx. 2 minutes. Place on a wire and allow cooling before decorating.

Note: For a variation make triple choc chip waffles, made with ⅓ white choc, ⅓ milk choc and ⅓ dark choc.
