Granola

Granola is a baked crispy breakfast cereal developed by Dr John Harvey Kellogg and in the 1960’s it became known as “Hippie” Heath Food. It is regularly served with yoghurt as breakfast or as an appetizer with fresh fruit anytime of the day. This is my version which is easy to make to your own specifications.

Ingredients Serves 6

2 cups rolled oats (200 g)
½ cup shredded coconut (40 g)
2 tbls sliced almonds (18 g)
1 tbls chopped macadamia (9 g)
2 tbls chopped pecan nuts (18 g)
1 tbls chopped walnuts (9 g)
½ cup sesame seeds (40 g)
¼ cup honey (90 g)
¼ cup Maple syrup (90 g)
⅓ cup canola vegetable oil (70 g)

Method

Preheat oven to 175ºC
Place the dry ingredients in a bowl and mix
Mix the liquid ingredients together in a separate bowl and pour into the oat mix and combine
Spread mixture evenly on a lightly greased 25 x 38 x 3 cm tray
Bake for approx. 40 min. and stir the mix around every 10 min. until lightly toasted and brown
Allow to cool breaking the crispy granola into small pieces
Store at approx.19ºC in airtight and sealed containers

Note: Substitute with any nuts or seeds you desire. If you can’t get the real maple syrup use golden syrup, glucose or corn syrup.
For gluten free option use rolled rice.
Suggestion flax seeds, cashew nuts, hazelnuts whatever is easy to get you can use dried fruit too if preferred
Granola can be used in bread, as crisp for desserts or make a granola bar for lunch, only your imagination will stop the use
