Beef and Crispy Macaroni Cheese Bake

Macaroni and cheese bake is and has always been classified as a comfort food and is easy to compose. It is also an ideal dish to prepare in advance, put in the freezer or fridge for later baking.


Ingredients serve 6

250 g. macaroni
500 g. beef mince
1 onion chopped (150 g)
Pinch of salt and pepper
Pinch of Oregano ground
Pinch of Nutmeg ground
1 Tablespoon chopped parsley
50 g butter
¼ cup breadcrumbs
1 red capsicum diced (200 g)

Cheese Sauce Ingredients

50 g butter
50 g flour
½ tsp salt
¼ tsp white pepper
500 ml milk
100 g shredded mozzarella cheese

Method

Cook the macaroni al dente for approx 12 min. and drain the water off.
Put a little olive oil in a large saucepan and brown the meat while stirring. Add the chopped onion, salt, pepper, oregano, nutmeg, parsley and the diced capsicum. Make the cheese sauce and add to the meat mix. Combine macaroni with meat mix.
Divide mixture into 6 ramekins or a ceramic baking dish 18 x 25 cm and bake in the oven at 210˚C for 20 minutes.
Garnish with chopped capsicum and a sprig of parsley.

Note: Use other variety of cheese for a stronger aroma such as Cheddar or Gruyere
