During our recent trip to Europe, this easy cookie recipe proved to be very popular amongst our Irish and Danish friends and family. The little ones were constantly asking "Uncle Alex" to help them in the kitchen. They too got involved in making the dough, delighted in watching the creation of their own cookies and enjoyed devouring them. Eleven year old "Nial" brought his passion for cooking into the kitchen and proved to be a "Mastercook" in his own right.
Chocolate Chip Cookie Recipe
Ingredients
200 g chocolate chip
1½ cup brown sugar (330 g)
¾ cup caster sugar (160 g)
230 g unsalted butter
3 eggs (150 ml)
4 cups self raising flour (530 g)
Method
Preheat oven to 180ºC.
Place chocolate chip, sugar and butter in a bowl and mix evenly with a spoon.
Add eggs and mix lightly.
Add flour and mix firmly together to form dough.
Weigh cookie dough up in 40 gram pieces and make round balls.
Place cookie balls on a greased baking tray or on a tray with baking paper.
Bake in a preheated oven on 180ºC for approx. 12 min.
Cookie dough can be place in a sealed plastic bag and stored in the freezer for later use.
Note: These cookies are nice and chewy. Use white, milk or dark chocolate chip as desired.
