Bircher Muesli

Bircher Muesli is a traditional Swiss recipe and makes an ideal healthy and delicious breakfast to start your day. In northern Europe unprocessed grains has always been soaked overnight for fermentation.
This is a modified version which I eat every morning before going to work.




Ingredients serve 6

½ cup sultanas (85 g)
1½ cup rolled oats (150 g)
1 tbls sesame seeds
¼ cup chopped walnuts
160 ml orange juice
3 tbls natural yoghurt (100 ml)
200 ml fresh cream
300 ml milk
4 tbls honey (80 g)
¼ diced apple
¼ peeled and diced orange
½ lemon, juice (10 ml)

Method

Place rolled oats, sultanas, nuts and seeds in a bowl.
Pour in orange juice, milk, fresh cream and natural yogurt one by one and mix.
Add honey, lemon juice, apple and orange, combine well.
Cover with food wrap and store in fridge for at least eight hours to allow the oats to soak in the juices.


Note: Any seeds or nuts you prefer may be added i.e. Pumpkin, sunflower or flax seed, almonds, pecan, macadamia or pistachio.
Grate fruit and omit nuts for smaller children.
For a gluten free option use rolled rice or gluten free oats.
Seasonal berries i.e. blueberries, strawberries and raspberries can be added daily to your breakfast bowl.
