Rösti is made with cooked or raw coarsely
grated potato and depending on the frying technique other fats are added such
as butter seasoned with salt and pepper.
2 eggs
½ cup plain flour (80g)
1 tsp salt
½ tsp ground black pepper
4 grated potatoes (650g)
2 cups grated Kumara (300g)
6 finely chopped spring onions
Oil for frying
Method
Whisk eggs, flour, salt and pepper together
in a large bowl. Add potatoes, kumara and spring onions and mix evenly. Divide the
batter into 12 even portions. Heat some oil in a frying pan over medium heat.
Place some of the rosti in the hot pan and cook for approx. 5 minutes on each
side. Remove from the pan and keep warm in the oven. Continue until all the
batter is used.
Note:
You can also make two large rosti by filling half
the mixture in a frying pan and cook for 10 minutes on medium high and flip
over and cook for another 10 minutes.
