Pistachio Biscuits

These biscuits are similar to macaroons and are simple to make.


Ingredients make 40 biscuits

150 g pistachio kernels
165 g caster sugar
50 g plain flour
3 egg whites

Method

Preheat the oven to 180°C normal bake (160°C fan forced) and line two baking sheets with baking paper. Place the pistachio nuts a food processor and grind. Take 30 grams out of the processor for topping. Add the rest of ingredients and blend for approx. 30 seconds. Place of the mixture with a teaspoon or pipe with a piping bag on the prepared trays. Sprinkle with remaining grinded nuts and bake for approx. 10 minutes. Allow cooling before placing in an airtight container. Dust with icing sugar.


Note: Try dusting with icing or sandwich together with ganache.
