Basic Butter Biscuit Dough

This is a magnificent easy base recipe for quick biscuits.


Ingredients

250 g soft butter
160 g caster sugar
1 tsp vanilla extract
1 egg (50g)
340 g plain flour

Method

Preheat the oven to 180° C normal bake. Place butter and sugar in a mixing bowl, blend until evenly mixed. Mix in the egg and vanilla. Add flour and mix to form a dough. Make 20 gram small round balls and place on a paper lined baking tray with spaces in between. Press the balls slightly on top and place the tray in the oven. Bake for approx. 12 minutes until golden brown.

Variations: Add 80 grams of either finely chopped nuts, dried fruit, finely chopped chocolate after the flour is mixed in or substitute vanilla with 1 tsp of grated lemon rind.


Note: The finished dough can be rolled into a log, covered with cling wrap and stored in the freezer for later use.
