Oven Baked Crispy Chicken Drumsticks

These delicious drumsticks are baked with a coating blend of Dijon mustard, buttermilk and corn flake crumbs.


Ingredients serve 4

8 chicken drumsticks
½ cup plain flour
1 tsp paprika
1 tsp salt
½ tsp ground black pepper
1/4 cup buttermilk
1 egg
2 tablespoons Dijon mustard
1 cup corn flakes

Method

Preheat the oven to 200°C normal bake. Place flour, paprika, salt and pepper in a deep bowl and combine. Whish buttermilk, egg and mustard together in a second bowl. Crush the corn flake in a blender to a coarse consistency and place in a third bowl. Dip the drumstick in the flour mix first, then in the egg mix and last in the crusted corn flakes. Place the drumstick in a deep greased baking tray and bake for approx. 40 minutes. Serve with steamed vegetable.


Note: Try Japanese breadcrumbs (panko) instead of corn flakes.
