These scones are fabulous for Christmas.
Ingredients
make 15
500 g self raising flour
1 tsp mixed spice (10g)
35 g brown sugar
400 ml cream
230 g fruit mince
Method
Preheat oven to 200º C fan forced (220º C
normal bake).Place flour, mixed spiced and sugar in a bowl and combine. In
another bowl combine cream and fruit mince add this mix to the flour and
combine. Place on a lightly floured table and roll or press out to a thickness
of approx. 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly
greased flat baking tray and bake in the oven for approx. 12 min. Dust with
icing sugar. Serve hot or cold with custard or whipped cream.
Note: Try adding chopped toasted almonds.
