Cheese and Herb Seeded Wholemeal Damper

This is a satisfying quick savoury bread to make and excellent served with soup.


Ingredients make 1 loaf

350 ml buttermilk
1 tsp caraway seeds
2 tbls sesame seeds
2 tbls flax seeds
1 tbls poppy seeds
2 tbls pepita kernels
1 tbls mixed dried herbs
120 g shredded cheddar cheese
400 g wholemeal self raising flour

Method

Preheat oven to 230° C normal bake. Place buttermilk, seeds and cheese in a large mixing bowl and mix evenly. Add flour and blend until evenly combined. Mold into a 20 cm round bowl and dip in wholemeal flour. Place the dough on a baking tray and make several cuttings on top with a sharp knife. Bake in the oven for 15 minutes and lower the temperature to 200° C. Bake for further 20 minutes and remove from the oven. Allow 20 minutes cooling on a wire before cutting and serving.


Note: Try adding finely chopped parsley with the chives.
