Hobnob Biscuits

This is a straightforward British biscuit recipe very similar to other oat biscuits such as Anzac biscuits with a sweet crunchiness and is perfect with a cup of tea.

Ingredients make 50 biscuits

240 g plain flour
240 g quick oats
240 g caster sugar
240 g butter
2 tbls golden syrup
1 tbls hot water
½ tsp bicarbonate of soda

Method

Preheat oven to 180ÂșC normal bake. Place flour, oats and sugar in a bowl and combine. Place butter and golden syrup in a saucepan and heat gently until the butter is melted. Take the pan off the heat. Mix water and soda in a small cup and stir into butter mixture. Add liquid mixture to the dry ingredient mixture and blend until combined. Make small size balls and place on a baking paper lined trays. Flatten the balls with your hand. Bake for approx. 10 minutes. Allow cooling before placing the biscuits in a container and store covered in the pantry.

Note: If you prefer biscuits with chocolate, spread melted chocolate on the backside and allow setting in the fridge. Try adding other ingredients such as ginger, orange and nuts.
