Banana and White Chocolate Muffins

These moist banana muffins have extra goodness with white chocolate and macadamia nuts.


Ingredients make 9 muffins

2 ripe bananas (240g)
⅔ cup brown sugar (120g)
2 large eggs (100g)
6 tbls melted butter (90g)
1 tsp vanilla extract
¼ cup buttermilk (60ml)
2 cups plain flour (320g)
2 tsp bicarbonate of soda
⅔ cup finely chopped white chocolate (150g)
½ cup chopped macadamia (60g)

Method

Preheat oven to 180ÂșC normal bake. Place bananas in a large bowl and mash. Add sugar and eggs, mix until combined. Blend melted butter, vanilla and buttermilk in the mixture. Place flour and soda in a bowl and mix evenly before adding to the banana mixture. Blend until batter is evenly mixed and spoon into paper cup filled muffin tins. Bake in the oven for approx. 30 minutes. Allow the muffins to cool in the tins for 5 minutes before removing.

Note: For a variation try milk or dark chocolate instead of white or a combination.
