This cake slice is wonderfully moist with the combined flavours of white chocolate and macadamia nuts.
150 g chopped white chocolate
150 g unsalted butter
3 eggs (150g)
60 ml cream
180 g self raising flour
60 g caster sugar
180 g chopped white chocolate
145 g chopped macadamia nuts
Method
Preheat oven to 150°C normal bake. Grease a 18 x 28 cm cake tin and line with baking paper. Place 150 g white chocolate and butter in a small saucepan over low heat. Melt while stirring until chocolate is melted and combined with the butter. Add the eggs and stir with a spoon until well combined. Add cream, flour and sugar, mix until combined. Add the second portion of white chocolate and macadamia nuts. Blend mixture until even and pour into the prepared cake tin. Bake in the oven for approx. 40 minutes. Remove from the oven and allow cooling before cutting in finger size slices. Keep slices stored in a closed container in the fridge.
Note: If macadamia is not available try other white nuts such as almonds.
