Salsa is the Spanish term for sauce and generally refers to tomato based hot sauces typical from the Mexican cuisine. This is an excellent mild tomato salsa and superior as a compliment to hot food or as a healthy dip with chips.
¼ red onion
1 tsp minced garlic
5 chopped Roma tomatoes (400g)
½ lime or lemon juice
1 handful finely chopped parsley
¼ tsp sea salt
¼ tsp cracked black pepper
Method
Place ingredients in a food processor and pulse until minced and evenly in texture. Allow cooling in the fridge before serving.
Note: To make it spicier use coriander leaves instead of parsley, minced ginger instead of garlic and add some finely chopped chili.
