Seeded Dutch Oven Bread

This bread is extremely easy to make at home and is similar to sourdough bread.


Ingredients make 1 big loaf

100 g long grain rice
400 g whole meal flour
300 g white bread flour
40 g rolled oats
20 g pepita kernels
20 g flax seed
20 g poppy seeds
20 g sesame seeds
20g salt
1 packet dried yeast (7g)
625 ml cold water
60 g honey

Method

Grind the rice in a blender or coffee mill and place in a big bowl. Add the other ingredients and whisk evenly. Cover the bowl with a tea towel and allow the first rise for 8 – 12 hours on the table. Spray a Dutch oven with oil and dust with flour. Deflate the dough and transfer to the Dutch oven. Sprinkle seeds on top such as poppy and sesame. Place the lid on top and allow the second rise, approx. 60 minutes. Preheat oven to 225ยบ C normal bake. Remove the lid and make a few cut in the top of the dough before placing in the oven with the lid on. Bake for approx. 50 minutes. Remove the bread from the pot and allow cooling on a wire rack for 60 minutes before slicing.


Note: The dough can be left in the fridge for 8- 12 hours before the first rise.
