Chocolate Mousse and Brandy Gateau

This marvelous chocolate cake is perfect for dessert or with Sunday afternoon tea.


Ingredients serve 14 -16

300 g whipped cream
1200g chocolate mousse
800 g chocolate sponge
300 g dark chocolate shavings
150 ml Brandy or Cognac
7 – 8 strawberries cut in half
14 – 16 chocolate tiles

Method

Slice the chocolate sponge in four layers. Drizzle brandy on all the sponge layers. Place the bottom layer chocolate sponge on a cake tray and spread an even layer of chocolate mousse. Place the second sponge layer on top and spread an even layer of chocolate mousse, continue the same process until all sponge layers are used. Cover the side with fresh whipped cream and chocolate shavings. Divide and cut the cake into pieces. Dust with cocoa powder and decorate each slice with a whipped cream rosette. Place a chocolate tile and half a strawberry on each rosette.


Note: Try using milk chocolate instead of dark chocolate.
