Choc Cherry and Almond Scones

This is a superb scone recipe with wonderful flavour combination in almond, chocolate and cherries.


Ingredients make 15

470 g self raising flour
100 g caster sugar
10 g salt
100 g unsalted butter
350 g milk
70 g almond splits chopped
140 g dark choc chip
100 g finely chopped glaze cherries

Method

Preheat oven to 200ºC fan forced (220C normal bake). Combine flour, sugar and salt in a large bowl. Shred the cold butter and use your hands to rub the butter into the flour until it resembles bread crumbs. Place milk, almond, chocolate and cherries in another bowl and combine. Add liquid mix to dry mix and combined to dough. Place the dough on a floured workbench and roll or press out to a thickness of approx 25 mm. Cut scones with a cutter 5 cm. in diameter and place on lightly greased flat baking tray. Bake in the oven approx 12 min. and dust with icing sugar.


Note: Try other dried fruits instead of cherries such as apricots, pineapple, raisins or mango.
