Buttermilk Cinnamon and Mixed Fruit Scones

Great flavour in these buttermilk scones blended with cinnamon and mixed fruit.


Ingredients 18

500 g self raising flour
100 g caster sugar
10 g salt
1 tsp ground cinnamon
130 g unsalted butter
350 ml cultured buttermilk
300 g mixed dried fruit

Method

Preheat oven to 200ºC fan forced (220C normal bake). Combine flour, sugar, salt and cinnamon in a large bowl. Rub the butter into the flour until it resembles bread crumbs, add buttermilk and mixed fruit. Combine this mixture to dough and place on a floured workbench. Roll or press out to a thickness of approx 25 mm. and cut with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray and bake in the oven approx 12 min. Dust with icing sugar.


Note: Mixed dried fruit mixture is a blend of fruit such as citrus peel, sultanas, currants and cherries.
