Buttermilk Apple and Pecan Scones

These scones have great spicy flavour combination with buttermilk, apple, mixed spice and toasted nuts.


Ingredients make 18

450 g self raising flour
100 g caster sugar
10 g salt
1350 g butter
300 g buttermilk
170 g apple finely chopped
1 tbls mixed spice
170 g finely chopped toasted pecan

Method

Preheat oven to 200ºC fan forced (220C normal bake). Place flour, sugar and salt in a bowl and combine. Rub the butter into the flour mix with your hands. Combine buttermilk, apple, mixed spice and pecan in another bowl. Add this mixture to the flour blend and mix until combined. Place the dough on a floured workbench and roll or press out to a thickness of approx 25 mm. Cut scones with a cutter 5 cm. in diameter and place on lightly greased flat baking tray. Bake in the oven approx 12 min. and dust with icing sugar.


Note: Try other chopped fruits such as pear or quince
