Mixed Seed Soda Bread

Quick breads are the easiest bread to make and you can change the flavour to your taste. The dough to this buttermilk and soda bread is made similar to scones.


Ingredients

400 g white plain flour
150 g wholemeal flour
1 tsp baking soda
20 g brown sugar
12 g salt
6 g caraway seeds
20 g flax seeds
20 g sesame seeds
120 g soft butter
400 ml buttermilk

Method

Preheat oven to 230ºC. Mix together the dry ingredients in a large bowl. Add the butter and use your hands to rub the butter into the flour until it resembles bread crumbs. Add the buttermilk and working from the centre mix with your hands making dough. Turn mixture out onto a floured board and knead until combined. Form a large round ball and place on a baking sheet or a lightly floured baking tray. Cut a deep cross and bake for 15 min. Reduce oven heat to 200 ºC and bake for approx. 30 minutes or until the bread is cooked and sounds hollow when tapped at the base.


Note: If you don’t have buttermilk you can substitute with a blend of 200 ml yogurt, 200 ml milk and 1 tablespoon lemon juice or vinegar.
