Honey and Sesame Seed Pork Fillet with Carrot and Ginger Sauce

This tasty pork tenderloin dish cooked with honey and sesame seeds with spicy carrot sauce is incredible.


Ingredients serve 2

130 ml freshly squeezed carrot juice
2 tsp minced ginger
110 g butter
230 g peeled potatoes and cut into cubes
1 tbls vegetable oil
1 tbls chopped fresh rosemary
2 tsp minced garlic
1 trimmed pork fillets
25 ml olive oil
1 tbls honey
2 tbls sesame seeds

Method

Preheat oven to 200ÂșC normal bake. Place 30 g butter and olive oil in a frying pan. Cook the tenderloin until golden brown on each side and season to taste with salt and pepper. Drizzle the honey over the fillet and coat in sesame seeds. Place the fillet in the oven and cook for approx. 12 minutes. Remove from the oven and rest for 5 minutes before cutting. Place the carrot juice and ginger in a sauce pan over medium heat and bring to the boil. Cook for approx. 4 minutes while stirring. Whisk 30 g butter and vegetable oil in. Place 50 g butter in a frying pan over medium heat and cook approx. 4 minutes until potatoes golden brown. Add herbs, garlic and seasoning and cook until potatoes are cooked. Cut the fillet in thick slices and place on the plates. Place the potatoes and spoon the sauce over the potatoes and meat. Drizzle with chopped parsley and cracked pepper.


Note: You can use other fresh herbs from the garden such as thyme, parsley and oregano.
