Chicken Drumsticks in Tomato Alfredo Sauce

Slow cooked chicken drumsticks are perfect combined with tomato, basil and Alfredo sauce in this dish.


Ingredients serve 4

250 ml cream
80 g butter
1 tsp garlic
¾ cup grated parmesan cheese (90g)
1 tbls chopped fresh parsley
8 skinless chicken drumsticks
½ tsp black ground pepper
250 g small Roma tomatoes
½ cup freshly chopped basil leaves

Method

To make the Alfredo sauce, place cream, butter and garlic in a large frying or sauce pan over medium heat until it starts to bubble. Simmer gently for approx. 12 minutes until sauce has reduced a little. Add cheese and seasoning to the sauce. Add the chopped parsley and blend until fully combined. Sprinkle the pepper on the drumstick and cook in a skillet over medium heat until cook brown on all sides approx. 5 minutes. Add tomatoes and the Alfredo sauce. Cook covered on low heat, simmering for approx. 20 minutes. Serve with steamed rice, basil and cracked pepper.


Note:  This dish is also great with pasta of your choice. The Alfredo sauce always tastes best homemade, but if you don’t want to make your own sauce it is readily available in the supermarket.
