Chicken and Bacon Casserole

Cooking chicken with bacon will add lots of extra flavour in this easy casserole recipe which can also be cooked in a slow cooker. This chicken dish is great both with boiled or mashed potatoes or rice.


Ingredients

2 tablespoons oil
1kg free range chicken thighs cut into pieces
4 diced bacon rashes (200g)
1 diced brown onion (200g)
1 cup chicken stock (250ml)
1 cup cream (250ml)
Chopped parsley

Method

Heat oil in a large pot and cook the chicken on medium heat until brown on all sides. Remove the chicken from the pot and put aside. Place onion and bacon in the pot and cook for approx. 5 minutes. Put the chicken in the pot, add stock and bring to the boil. Reduce heat and simmer covered for approx. 50 minutes. Add cream while stirring and place the mixture in a serving bowl. Serve with boiled rice, cracked pepper and chopped parsley.

Note: The is a pleasant and runny sauce which works great with rice and potatoes, however it can be thicken with cornflour. Try adding 1 chopped leek, 1 tsp. sage and 1 tsp. marjoram for extra flavour.
