Banana and Oatmeal Cookies

These cookies are healthy, vegan, dairy free, flourless and lactose free and are great for in between snacks.

Ingredients make 36

3 bananas (450g)
⅓ cup vegetable oil
2 cups quick oats
1½ cup chopped dates
½ cup chopped pecans
1 tsp vanilla sugar or essence
½ tsp sea salt

Method

Preheat oven to 180ºC normal bake or fan forced 160ºC. Mash the bananas in a large bowl and combine with oil. Blend in the rest of the ingredients until well combined. Place tablespoons size batter, approx. 30 grams, on a baking paper lined tray. Bake in the oven for approx. 15 minutes. Allow cooling before placing in airtight containers.

Note: For more flavour add cinnamon or mixed spice.
