Banana Pancakes

This pancake is delicious with plenty of banana flavour ideal for breakfast, lunch and dessert.

Ingredients make 12

3 mashed ripe bananas (300g)
1 egg
1 tsp vanilla sugar or essence
1 cup self raising flour (160g)
½ cup mil (125ml)

Method

Blend bananas, egg and vanilla in a food processor and add flour and milk. Blend until a uniform and smooth batter is formed. Spoon 60 gram batter into a lightly greased frying pan and cook for approx. 2 minutes on each side. Serve with fresh fruit, yogurt and maple syrup.

Note: Keep bananas stored at room temperature which allow quick ripening.
