Blueberry Lemon Muffins


These healthy sweet muffins were made using our new super quick 4 blade Ninja food processor, however you can use any type of food processor.



Ingredients make 12

½ cup honey (160g)
2 eggs (100g)
¾ cup whole milk (180g)
⅔ cup melted butter (160g)
1 cup Wholemeal flour (160g)
1 ⅔ cup plain flour (130g)
1 tbls bicarbonate of soda (16g)
1½ cups frozen blueberries (180g)
3 tsp lemon zest (1 Lemon)

Method

Preheat oven to 200ÂșC. Place the blade in the processor bowl. Place honey, eggs, milk and melted butter in the processor bowl and pulse until smooth. Mix flour and soda in bowl and put in the liquid mixture. Pulse until batter is combined. Fold in lemon zest and blueberries and lemon zest just until evenly mixed. Spoon mixture into prepared muffin tins and bake for approx. 18 minutes.

Note: I used frozen berries but fresh berries are good too, however if fresh fruit is used the muffins might need 2 minutes less cooking time in the oven.
