Pork Fillet in Puff Pastry

This elegant presentation of pork tenderloin will have an impact on the family with its taste and impress the cook with its ease of preparation. Tenderloin in Puff Pastry is an elegant main dish recipe perfect for entertaining and it is absolutely one of my favourites.





Ingredients serve 4

2 Pork fillet (800 g)
Puff pastry 2 sheets (300 g)
1 Onion (150 g)
1 kg potatoes peeled
500 g cream
500 g milk
1 tsp salt
1/2 tsp pepper
1/4 tsp ground nutmeg
Parsley

Method

Preheat oven to 180˚C.
Slice the potatoes and layer in a deep baking dish. Finely chop the onion and sprinkle on top.
Mix cream, milk and season with salt, pepper and nutmeg.
Pour mixture over potatoes and sprinkle 1 tbls of chopped parsley on top.
Cook in the oven at 180˚C approx. 55 min.
Roll the pork fillet in pastry after seasoning with salt pepper and nutmeg. Use leftover pastry for decoration on top.
Cook in the oven at 180˚C for 30 minutes then 10 minutes on 200˚C.
Serve with Mediterranean style vegetable, beans, carrots, cauliflower, capsicum and corn.

Note: Recipe can be prepared in advance and stored in the fridge ready to be placed later on the same day. Frozen puff pastry from your local supermarket is ideal for this dish.
