Chocolate Mousse

A mousse is a stable prepared food that incorporates air bubbles to give it a light and airy texture. Depending on how it is prepared it can range from light and fluffy to creamy and thick. Chocolate mousse is a classic French dessert full of decadence. It is quick and easy to make.  Our friends the Culson family loves this dessert, they always asks for more or when can we have it again!!




Ingredients serve 8

5 eggs (250 g)
2 tbls caster sugar (40 g)
300 g chocolate
600 g fresh cream
1 tsp instant coffee
1 tbls rum


Method

Melt the chocolate and instant coffee slowly either in the microwave or in a double boiler.
Whisk the eggs and sugar in a machine for approx 10 min. until light and fluffy.
Mix the egg mixture slowly in the melted chocolate and the rum.
Fold in the softly whipped cream.
Pour the mousse into small ramekins or glasses and pour a little fresh cream in the middle and make some swirls.
Place in the fridge for at least 2 hours.
Before serving decorate with a strawberry.

Note: Use white, milk or dark chocolate as desired. Instant coffee and alcohol are optional however your favourite liqueurs may be added e.g. Whisky, Brandy, Tia Maria or Bailey’s.
