Chicken Caesar Salad

The original Caesar salad is a combination of romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, egg, Worcestershire sauce and black pepper. The dish has so many variations and this one is an addition to Bernie’s chicken recipe book.



Ingredients

75 g. bacon
1 cooked chicken breast (300 g)
Cos lettuce
Slice of bread for croutons
Mozzarella or cheddar cheese
35 g Caesar dressing

Method

Heat a frying pan over medium heat, use either butter or oil to cook the chicken for 4-5 minutes each side or until cooked through. Set aside for 5 minutes to cool then slice thinly across the grain.

Heat another frying pan over high heat and add the bacon and cook while stirring for approx 5 minutes or until crisp. Preheat grill on high. Cook the diced bread under grill for 1 min each side or until crispy.

Arrange lettuce, croutons, bacon and cheese on a serving platter. Drizzle with Caesar salad dressing. Arrange chicken on top and serve.

Note: All the ingredients can be made in advance. Try to make it as a starter, a side dish or for lunch.
