2 cup bread crumbs
1 tbls ground oregano
1/4 tsp pepper
1 tsp salt
1 tbls finely chopped parsley
1 tbls finely chopped basil
1 cup grated parmesan cheese (100 g)

Method

Mix all breadcrumb ingredients in a bowl.
Whisk together water and egg in a deep plate.
Slice chicken breast parallel in half and tenderize before dipping into the egg mix.
Cover with breadcrumb mix, and then lay on a plate.
In a frying pan, heat a mixture of oil and butter on medium heat, place chicken schnitzel in pan and cook for approx. 5 min. before turning over.
Serve with couscous, tomato jam and fresh tossed salad.
