Dampers are quick breads to make and this
sweet fruit version is perfect for breakfast or morning tea.
Ingredients
make 1 loaf
100 g porridge oats
300 g white self raising flour
300 g wholemeal self raising flour
100 g caster sugar
1 tsp salt
1½ tsp mixed spice
50 g soft butter
50 g raisins
50 g sultanas
50 g finely chopped pitted dates
50 g mixed peel
450 ml buttermilk
Method
Preheat the oven to 230° C normal bake. Place
oats, flours, sugar, salt and spice in a large bowl and combine. Add butter and
use your hands to rub into the flour until it resembles bread crumbs. Blend
buttermilk and fruit into the flour mix until well combined. Turn onto a
lightly floured surface and mold into a ball shape. Place on a baking paper
lined baking tray and sprinkle grated or demerara sugar on top. Cut a cross on
top with a sharp knife. Bake in the oven for 15 minutes and lower the
temperature to 200° C. Bake for further 20 minutes and remove from the oven.
Allow cooling on a wire for at least 30 minutes before cutting and serving.
Note: Try adding 100 gram chopped walnut with the fruit in this bread.
