These lovely sweet fruit scones are perfect
any time of the day.
Ingredients
make 15
500 g self raising flour
5 g salt
100 g caster sugar
200 g soda water
200 g fresh cream
1000 g white chocolate chips
50 g blackberries
50 g finely chopped strawberries
50 g blackcurrants
50 g boysenberries
Method
Cut white chocolate in small chips. Place
self raising flour, sugar and salt in a large bowl and combine. Blend soda
water, cream, fruits and white choc chips in another bowl. Pour the liquid into
the flour and mix until combined. Turn the scone dough out on a floured table,
roll or pat the scone dough to a thickness of 25 mm and cut scones out with a 5
cm scone cutter and place on a slightly floured tray with some distance in
between. Bake in the oven for approx. 12 minutes. Dust with icing sugar on top
the scones.
Note: A blend of milk or dark chocolate can be used instead of white
chocolate chips.
