Cream Cheese Fruit and Nut Bread

This sweet soft fruit and nut yeast bread is perfect for breakfast.


Ingredients make 1 loaf

30 g white bread flour
80 ml lukewarm water
1 sachet dried yeast (8g)
60 g cream cheese
1 egg (50g)
50 g caster sugar
1 tsp salt (6g)
160 ml lukewarm water
150 g sultanas
75 g chopped walnuts
380 g white bread flour

Method

Place 80 ml water, yeast and 30 g flour in the mixing bowl. Blend evenly and leave at room temperature for 15 minutes. Add cream cheese, egg, sugar, salt, water, fruit and walnuts, blend uniformly. Add flour and mix with a dough hook for approx. 10 minutes until dough is soft and elastic. Cover the bowl and allow the dough to rise for 2 hours at room temperature. Deflate the dough and shape into a long piece and place in a greased bread tin. Cover and allow proofing for approx. 60 minutes. Preheat oven to 200ยบ C normal bake. Bake for 30 minutes and remove from the oven. Brush the top with butter and allow cooling for at least 30 minutes before cutting.


Note: Try dusting the bread with icing sugar and be sure the ingredients are at room temperature especially egg and cream cheese.
