Pressed Cookies are made with a special tool to make buttery
cookies. This instrument is like a gun with a cylindrical barrel and a trigger
to press the soft mixture through a metal template.
250 g butter
180 g sugar
1 egg (50g)
1 teaspoon vanilla extract
360 g plain white flour
½ tsp baking powder
Method
Preheat oven to 170ÂșC normal bake. Place butter and sugar in
a mixing bowl. Beat until light and creamy. Add egg and vanilla mix well. Sift
flour and baking powder before adding to the mixture. Load the cookie press
from the backside and seal the gun with the trigger. Press the cookie mixture
onto baking paper or greased baking trays. You can place ingredients on top of
the cookies such as nuts, chocolate or dried fruits otherwise leave them plain.
Bake for approx. 10 minutes. Remove cookies from the oven and allow cooling
before placing in closed containers.
Note: If you are
using unsalted butter add ½ tsp salt.
