Using tea as the liquid will add superb flavours to these
sweet scones.
530 g self raising flour
10 g salt
130 g butter
270 ml cold black tea
130 g brown sugar
1 tbls mixed spice
100 g glazed ginger finely chopped
Method
Preheat oven to 200ÂșC fan forced (220C normal bake). Place
flour and salt in a bowl. Cut butter into small cubes and rub into the flour
mix with your hands. In another bowl combine brown sugar, mixed spice, black
tea and glazed ginger, add this mix to the flour and combine with a scraper or
hands. Place the dough on a workbench dusted with flour and roll or press out
to a thickness of approx 25mm. Cut scones with a cutter 5 cm. in diameter.
Place on lightly greased flat baking tray. Bake in the oven approx 12 min. and
dust with icing sugar. Serve warm with custard and whipped cream.
Note: Try adding
other ingredients such as dried fruit and toasted nut.
