Sautéed Chicken

Correctly sautéed chicken breasts are excellent with only a simple sauce and pasta.


Ingredients serve 2

2 chicken breasts
1 tbls olive oil
1 tbls butter
½ cup chicken stock
½ cup dry white wine,
¼ tsp salt
2 tbls tomato passata
1 tbls fresh chopped parsley

Method

Preheat oven to 180ºC normal bake. Place oil and butter in a frying pan over medium heat. Add the chicken breast and fry for approx. 4 minutes on each side. Place chicken breast on a deep oven tray and place in the oven for approx. 15 minutes. Pour wine in the frying pan while stirring and cook until half is evaporated. Add chicken stock, salt and passata. Cook the sauce until it thickens slightly. Slice chicken and place on a plate. Serve with penne pasta and the sauce drizzle over. Sprinkle with chopped parsley and cracked black pepper.

Note: Allow chicken five minutes rest before slicing. Chicken and sauce is also great served with potatoes.
