Banana and Carrot Scones

These fine healthy wholesome scones are superb anytime of day.


Ingredients make 18

400 g wholemeal flour
400 g plain flour
40 g baking powder
1 tbls mixed spice (10g)
120 g butter
300 g milk
150 g shredded carrot
200 g banana puree

Method

Preheat oven to 200ºC fan forced (220C normal bake). Place flour, baking powder, mixed spices in a bowl and combine. Cut butter in small cubes and rub into the flour mix with your hands. In another bowl combine banana puree, milk and shredded carrot. Add this mix to the flour and combine with a scraper or hands. Place on a workbench dusted with flour and roll or press out to a thickness of approx 25mm. Cut scones with a cutter 5 cm. in diameter. Place on lightly greased flat baking tray. Bake in the oven approx 12 min. Dust with icing sugar.

Note: If you like sweeter scones add sugar.
