Honey and Ginger Chicken

Chicken thighs cooked in the slow cooker with a sweet honey, ginger, soy and coconut cream is a simple way to make dinner.


Ingredients serve 6

2 tbls vegetable oil
1000 g skinless chicken thighs cubed
½ cup honey (190g)
¾ cup light soy sauce (190g)
3 tbls tomato sauce (60g)
2 tsp minced garlic
1 tbls minced ginger
1 tin coconut cream (400g)
2 tablespoons cornflour
4 tablespoons water

Method

Heat vegetable oil in a frying pan over medium heat and sweat chicken pieces.
Pour honey, soy sauce, tomato sauce, garlic, ginger and coconut cream into a slow cooker and mix well.
Place chicken meat in the slow cooker and blend to coat with mixture. Cook covered on high for 3 hours.
Mix the cornflour and water together in a small bowl and stir into the sauce in the slow cooker until it thickens. Place boiled rice mixed with toasted cashew nut and chopped fresh coriander in a small bowl and spoon the meat and sauce mixture on top. Serve garnished with freshly chopped coriander.

Note: For additional flavour and heat add more fresh ginger or chili.
