This traditional delicious Irish fruit cake contains porter, which is a dark beer with luscious malt flavour.
Ingredients
225 g butter
225 g brown sugar
300 ml stout
225 g sultanas
225 g raisins
110 g mixed peel
450 g plain white flour
½ tsp bicarbonate of soda
1 tbls mixed spice
110 g glace cherries
3 eggs
Method
Preheat oven to 160ºC normal bake. Spray a 25 cm cake tin with cooking spray. Place butter, sugar and stout in a saucepan over medium heat. Cook until butter is melted. Add sultanas, raisins and peel to the mix and bring to the boil while occasionally stirring. Keep boiling for 3 minutes and take of the stove. Allow cooling for approx. 30 minutes until lukewarm. Place flour, soda and mixed spice in a bowl and blend. Add this flour mix and cherries to the fruit mixture and combine. Add eggs one at a time and mix evenly. Place batter evenly in the prepared tin and place in the middle of the oven. Bake for approx. 75 minutes and allow cooling in the tin for at least 1 hour. Remove cake from the tin and cover with food wrap. Keep the cake stored in a cool place or in the fridge for a day before cutting.
Note: For added flavour pour 80 ml stout on the cake while it is in the tin.
