This is excellent sweet scones for anyone liking caramel and cola. For more sweetness add crushed hard pecan caramel.
Ingredients make 15
500 g self raising flour
6 g salt
200 g Coca Cola
200 g fresh cream
100 g caramel syrup
130 g toasted pecan
Method
Preheat oven to 200ÂșC fan forced (220C normal bake). Combine self raising flour and salt in a bowl. Blend coca cola, cream, caramel and pecan in another bowl. Pour the liquid into the flour and mix with a plastic scraper or hand. Turn the scone dough out on a floured table, roll or pat the scone dough to a thickness of 25 mm and cut scones out with a 5 cm scone cutter. Place scones on a slightly floured tray with some distance in between. Bake in a fan forced oven on 200C for 12 minutes. After cooking sift some icing sugar on top of the scones.
Note: If self raising flour is unavailable, substitute 480 g plain flour and 20 g baking powder. A good scone is best made with light mixing and a hot oven to make them crisp on the outside and with a soft crumbly texture.
