This is a delicious beef casserole flavoured with your favourite choice of beer and is straightforward to cook.
50 g butter
1000 g diced chuck steak
5 diced bacon rashers (250g)
1 chopped brown onion (200g)
1 tsp minced garlic
2 diced carrots (150g)
180 g chopped celery
2 tbls tomato paste
1½ tsp dried thyme
1 cup beef stock
1 beer
50 g plain flour
½ tsp sea salt
½ tsp black ground pepper
Method
Heat butter in a large pot and fry bacon and onion. Remove bacon and onion mixture from the pot and set aside. Mix flour, salt and pepper in a large bowl and turn the meat in this mixture. Braise the meat in 2 tablespoon of oil. Add bacon, beer and stock. Stir until combined and add carrots, celery, tomato paste and thyme. Bring to the boil and simmer covered for approx. 50 minutes. Serve the warm stew with boiled potatoes.
Note: A good strong beer is always best such as old ale, porter or Guinness stout.
