Method
Roll shortbread out to 3 mm thickness and fill the bottom of some small pie tins. Place some fruit mince in the bottom and cover with more shortbread. Sprinkle some white sugar on top and bake in a preheated 180ºC oven for approx. 15 minutes.
Note: Fruit mince can be bought in most supermarkets.
