A fruit mince pie is a small British sweet pie traditionally served during the Christmas season made with a spicy fruit mix baked in shortbread. These pies have a Danish vanilla and butter biscuit top.
Ingredients
Shortbread
Fruit minceIcing sugar
Chocolate
350 g unsalted butter
170 g caster sugar
1 egg
400 g plain flour
1 tsp. vanilla sugar
Method
Roll shortbread out to 3 mm thickness and fill the bottom of some small pie tins. Place some fruit mince in the bottom. Place butter, vanilla and sugar in a bowl and cream until light. Add egg and mix evenly. Blend in flour until evenly mixed. Pipe the biscuit mixture on top of the fruit mince using a star nozzle. Bake in a preheated 180ºC oven for approx. 15 minutes.
Note: Fruit mince (also called mincemeat) can be bought in most supermarkets.
