Guacamole

This avocado dip has a bit of chilli for an extra flavour kick.


Ingredients

2 ripe avocados, peeled, stone discarded
20ml (1/4 cup) lime juice and zest
1 tomato, de-seeded and finely chopped
¼ onion, peeled, finely chopped (30g)
1 red chilli, de-seeded and finely chopped
1 tbls fresh coriander leaves, finely chopped
2 tbls sour cream
¼ tsp sea salt

Method

Place the avocados in a large bowl with the lime juice and mash until smooth. Add the other ingredients and mix well to combine. Place mixture in a serving bowl and surround with assorted chips or crackers.

Note: Make the dip as close to serving time as possible as it can discolour.
