These are lovely moist muffins using spicy ground ginger with added sweetness from dates.
Ingredients make 8
100g golden syrup
50 g melted butter
1 egg
125 g buttermilk
115 g brown sugar
275 g self raising flour
1 tsp ground ginger
1 tsp mixed spice
125 g finely chopped dates
Method
Preheat oven to 180ºC. Mix golden syrup, butter, sugar, buttermilk and eggs in a bowl with a whisk until combined. Blend together flour, ground ginger and mixed spice. Mix together the two mixtures and blend in the dates. Scope or pipe mixture into a paper cup filled muffin tray. Bake for approx. 25 minutes.
Note: A paper cup is not needed if you use silicon moulds.
