Baileys and Caramel Macaroon Gateau

Buttercream is a filling and icing, which is used extensively in cake making. An easy buttercream is made by creaming butter with powdered sugar and flavoured.

Ingredients

800 g vanilla sponge
300 ml Baileys Irish coffee
1000 g Caramel buttercream
300 g almond macaroons
200 g toasted long shredded coconut
Dark chocolate

Method

Cut the 30 cm round vanilla sponge in three layer and place the bottom layer on a cake tray. Sprinkle Baileys Irish coffee on each layer. Spread caramel buttercream evenly on bottom sponge layer with macaroon on top. Place another layer of Baileys Irish coffee infused sponge on top and spread caramel buttercream evenly on the second sponge layer with macaroon on top. Place the last Baileys Irish coffee infused layer of sponge on top and cover the Gateaux in caramel buttercream. Wrap the side with toasted coconut and divide the cake 14-16 pieces. Decorate the middle on top with toasted coconut and pipe a small rosette on each slice. Pipe a large rosette on each slice and top with two macaroons layered with caramel buttercream dipped half in dark chocolate.

Note: You can use fresh whipped cream flavoured with caramel instead of buttercream.
